Superfood Salad Recipe
Now that it’s warming up, salads are a real goer. Most of us find salads boring or unfulfilling, but who says they have to be either? If you pack your salads with the right ingredients they can become very moreish and bursting with colour so you know they are jam-packed with antioxidants, phytonutrients, vitamins and minerals. This superfood salad is a regular in my household and can be consumed day or night. There is so much goodness here I don’t even know where to begin. Very high in fibre, antioxidants, healthy fats and the addition of fruit creates not only a more summer feel but provides more nutrition and excitement.

Ingredients
  • 1cup walnuts(spinach, rocket, and watercress)
  • 1cup Beetroot Bulb(broccoli, sunflower, alfalfa, snow peas)
  • ½ Blueberrieschopped
  • ½ Carrotchopped
  • 1 Fresh Parsleygrated
  • 1 Lemongrated
  • 1Tbsp Garlic cloves
  • 1Tbsp Mixed Green Salad Leaves
  • 1Tbsp Pepitas
  • ½ punnet Raw Apple Cider Vinegar
  • Sea salt and Pepper to serve
Dressing
  • 1Tbsp Sprouts1 tablespoon lemon
  • 1Tbsp Sunflower Seeds
  • 2tsp Wholegrain Mustard
  • 2Tbsp olive oil
  • Almond Milk or Coconut Milkto taste
Instructions
  1. Place all ingredients in a bowl and toss to combine.
  2. Mix dressing in a jar by shaking and pour over.
Recipe Notes

Add baked/poached salmon or white fillet or chicken ½ breast for a dinner.
